Delicious dishes such as Green Chile Stew, Carne Adovada, Blue Corn Posole, Sopaipillas, Chicos, Enchiladas, and Christmas Salsa have slowly been developed in the mountain valleys of northern New Mexico over the past 375 years through a subtle blending of the tastes and native foods of the long isolated Spanish and the original Indian inhabitants.
